日本茶葉的品種可說是不計其數,目前以"YABUKITA"占壓倒性的多數,而少數派則是以"YABUKITA"的交配種或亞種為主。然而,在各地仍有許多外來種或在地種的茶葉,品嘗這些茶葉的不同風味也是享用日本茶的樂趣之一。在茶葉製造方法方面,友氣味清爽高雅的"普通蒸茶",以及茶香濃厚甘甜的"深蒸茶"。除此之外,在九州地區有許多口感清爽的"斧炒茶"。
